Bran Banana Bars

1 cup all-purpose flour

1/4 cup brown sugar -- packed

1/2 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1 1/2 teaspoons cinnamon

1 cup bran flake cereal -- crushed

1 cup skim milk

2 eggs

1 carrot -- shredded

1 ripe banana -- mashed

1/3 cup chopped walnuts

 

Preheat oven to 375F. Spray an 8 1/2 x 8 1/2 inch square baking pan with

nonstick vegetable cooking spray. In medium bowl, combine flour, sugar,

baking soda, baking powder, salt, cinnamon and cereal. Mix well. In small

bowl, combine milk, eggs, carrot, banana and walnuts. Add to dry

ingredients. Bake 25-35 minutes or until brown on top. Cut into 12 pieces.

 

Makes 12 servings
