Citrus Bars

Vegetable cooking spray

50 lowfat cinnamon graham crackers -- finely crushed

3 tablespoons margarine or butter -- melted

2 packages fat-free cream cheese (8 oz. ea.)

1 can fat-free sweetened condensed milk (or

lowfat -14 oz.)

1/4 cup frozen orange juice concentrate -- thawed

4 egg whites

1 teaspoon grated orange rind

 

Preheat oven to 350F. Spray 13 x 9-inch baking pan with cooking spray.

Combine crumbs (you will have approx. 2 cups) and margarine, press firmly

on bottom of prepared pan. In large mixer bowl, beat cheese until fluffy.

Gradually beat in condensed milk. Add juice concentrate, egg whites and

rind, mix well. Pour batter into prepared pan. Bake 25 minutes or until

center is set. Cool. Chilli garnish with fresh fruit, if desired.

Refrigerate leftovers.

 

Makes 24 to 36 bars
