Fruit with Tofu-Honey-Cinnamon Dressing

2 Granny Smith apples -- sliced

2 Gala apples -- sliced

1/4 cup fresh lemon juice

3 stalks celery -- chopped

1 can pineapple chunks (8-ounce) -- drained

1/3 cup walnuts -- chopped

1 cup plain low-fat yogurt

1/2 cup soft silken tofu

1 tablespoon honey

1 teaspoon cinnamon

 

Place sliced apples in lemon juice; add water to cover. Add celery, pineapple

and nuts.

 

Combine yogurt, tofu, honey and cinnamon in a food processor and blend until

smooth. Chill. Drain apple mixture with dressing and toss gently.

 

Makes 8 servings
