It might need mixed peppercorns. * Exported from MasterCook * Caramelized New Potatoes with Orange Recipe By :New Flavours for Vegetables and Salads: Potatoes Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds new potatoes -- scrubbed salt and pepper 2 fresh mint sprigs 4 tablespoons butter 2 tablespoons fine cut Seville orange marmalade 1 tablespoon finely chopped fresh mint Add the potatoes to a large pan of boiling salted water with the mint sprigs and cook for 7-10 minutes, depending on size, until almost tender. Drain well; discard the mint. Melt the butter in a wide based pan, add the potatoes and shake the pan to coat the potatoes in the butter. Add the marmalade and heat gently to melt it, turning the potatoes to coat well. Cook for about 15 minutes, stirring regularly, until golden brown and caramelized. Toss in the chopped mint and serve.
