Guest guest
Here's a great recipe for lentil dhal, and it's so easy to make. I came accross it in a wonderful cookbook I bought on the net. The title in fact means 'lentil lentil' since dhal is lentil in Hindi, but this is the English version...Fry the holy trinity of 1 onion, tsp grated fresh ginger and a tsp grated fresh garlic in sunflower oil. When soft add 2 tsps of Madras curry powder and a good-sized teacup of split red lentils. Fry the curry powder and the lentils in the oil until all the lentils are coated. Using the same teacup add three full of water and half a block of solid cream coconut. Coconut milk is better if available and simply use to replace the water. Add more water if necessary as the lentils cook. Finally, when the lentils have mushed remove from the heat, salt to taste and add a good bunch of fresh chopped coriander. The cookbook is called Hand to Mouth and is available here. http://www.endpapers.co.uk/go/to.cgi?minknoo Enjoy, Lucy
