Parmesan Vegetable Stir-Fry

Amount Measure Ingredient -- Preparation Method

1/2 onion -- thinly sliced

(approximately 3/4 cup)

1 clove garlic -- minced

1 tablespoon olive oil

1/2 cup sliced mushrooms

1 cup fresh spinach -- (packed)

1 tablespoon lemon juice

1/2 ounce shredded Parmesan cheese -- (2 tablespoons)

 

Saute onion and garlic in olive oil until soft. Add mushrooms and cook until

soft. Add spinach. Toss well and saute very briefly. Sprinkle with lemon juice

and Parmesan cheese. Serve hot.
