Guest guest Posted June 27, 2003 Report Share Posted June 27, 2003 xp: elf, veg-recipes * Exported from MasterCook * Spicy Zucchini Boats Recipe By :Curves by Gary Heavin Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 small zucchini 6 cups boiling -- salted water 4 ounces light cream cheese -- softened 1/2 cup shredded pepper jack cheese -- (2 ounces) 1/2 cup shredded Parmesan cheese 1/4 teaspoon cayenne pepper 1 teaspoon dried chives 1 medium bowl of ice Preheat oven to 350 degrees. Slice zucchini in half lengthwise to make boats. Blanch zucchini in boiling, salted water for 2 minutes. Drain, then immediately immerse zucchini in an ice bath. Drain thoroughly, blotting excess water with paper towels. Using a knife or small spoon, carefully hollow out zucchini by removing some of its pulp. (Leave at least a 1/4-inch wall.) Combine cheeses, cayenne pepper, and chives in a mixing bowl. Stuff zucchini with cheese mixture. Place in a lightly greased baking dish. Bake for 8 to 10 minutes or until squash is heated through and cheese is melted. PREPARATION TIME: 35 minutes Makes 4 (2-piece) servings.
