Spicy Zucchini Boats

4 small zucchini

6 cups boiling -- salted water

4 ounces light cream cheese -- softened

1/2 cup shredded pepper jack cheese -- (2 ounces)

1/2 cup shredded Parmesan cheese

1/4 teaspoon cayenne pepper

1 teaspoon dried chives

1 medium bowl of ice

 

Preheat oven to 350 degrees. Slice zucchini in half lengthwise to make boats.

Blanch zucchini in boiling, salted water for 2 minutes. Drain, then immediately

immerse zucchini in an ice bath. Drain thoroughly, blotting excess water with

paper towels. Using a knife or small spoon, carefully hollow out zucchini by

removing some of its pulp. (Leave at least a 1/4-inch wall.)

 

Combine cheeses, cayenne pepper, and chives in a mixing bowl. Stuff zucchini

with cheese mixture. Place in a lightly greased baking dish. Bake for 8 to 10

minutes or until squash is heated through and cheese is melted.

 

PREPARATION TIME: 35 minutes
