Nectarines with Cappucino Custard

1/2 egg substitute -- thawed

1/4 cup sugar

3 tablespoons corn starch

1 tablespoon coffee crystals

2 cups nonfat milk

2 tablespoons liquid French vanilla coffee creamer

6 fresh California nectarines

1 tablespoon sliced toasted almonds

 

Whisk egg substitute, sugar, corn-starch and coffee crystals together in

microwave-safe bowl or measure; whisking milk. Microwave at Medium-

High (70%) power, whisking at 2 minute intervals until custard thick-

ens, about 6 or 7 minutes. Blend in creamer. Chill. Before serving, slice

nectarines. Divide custard into dessert dishes and top with nec-

tarines and almonds.
