This was on the list a quite a while back. These won't taste like salmon

patties, but they are very good. You can pan fry them in just a little oil or

use non-stick spray if you want to keep the fat content as low as possible. I

think I have even baked them - spray the baking dish with non-stick spray or a

light mist of oil if you try it this way. Enjoy!

Mock Crab Cakes

1 20 oz can Worthington Low Fat Vegetable Skallops -- ground

1 medium onion -- chopped

2 tablespoons light mayonnaise

3 tablespoons mustard

4 eggs

OR 1 cup Morningstar Farms Scramblers

1 cup Italian seasoned bread crumbs

1 teaspoon Old Bay seasoning

2 tablespoons parsley

 

Combine all ingredients, fry into patties, and serve with tartar sauce.
