Avocado Pineapple Salad with Honey Lime Dressing

1/2 small pineapple -- cored, sliced

1 avocado -- sliced

1 tablespoon honey

2 tablespoons fresh lime juice

2 tablespoons grapeseed oil

or other light-tasting oil

1/4 teaspoon chili powder

1/4 cup chopped fresh cilantro (optional)

 

1. Arrange the pineapple and avocado decoratively on a platter.

 

2. In a bowl, whisk together the honey, lime juice, oil, and chili powder. Pour

the dressing over the avocado and pineapple. Garnish with cilantro, if desired;

serve.

NOTES : This bright, tropical salad is like a plate of sunshine. The tartness of

lime coupled with honey provides a perfect complement for the rich, smooth

flavor and texture of the avocado. Use fresh pineapple whenever possible; choose

one that has begun to develop pink or red markings on the outside. This

indicates full ripeness. In addition, the pineapple should smell sweet, and the

leaves should pull out easily.
