Guest guest Posted July 7, 2003 Report Share Posted July 7, 2003 sure is a lot of butter in this food. these recipes came from regina's latest book * Exported from MasterCook * Mashed Sweet Potatoes with Cloves and Molasses Recipe By :Regina Campbell Serving Size : 6 Preparation Time :0:20 Categories : Sides {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 sweet potatoes -- (prefer Garnet) 1/2 teaspoon salt 1/8 teaspoon ground cloves 2 tablespoons unsalted butter 2 tablespoons molasses 1. Preheat the oven to 350F (180C). Scrub the sweet potatoes and wrap them in foil. Bake 45 to 60 minutes, depending on the size of the sweet potatoes, until soft. 2. When the sweet potatoes are cool enough to handle, slit open the top and scoop out the flesh. 3. Mash or puree the flesh in a food processor until smooth. 4. Add the remaining ingredients to the food processor and mix well. Transfer to a serving bowl. Serve warm. GARNET: Referred to as the classic yam and much larger than a regular sweet potato, the Garnet is also called the Purple yam. Quite moist, its orange -yellow flesh is described as being " succulent " and having an excellent flavor. Encased in a light red-purplish garnet-colored skin, some can grow to be a foot long.
