Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c fresh spinach 1 c arugula 4 celery or lovage leaves -- (4 to 6) 6 mint leaves ¼ c flat parsley leaves ¼ c cilantro leaves ¼ c dill 2 scallions -- thinly sliced 1 pinch salt 1 T olive oil 1 t lemon juice -- (1 to 2) Directions Wash the greens and herbs and dry well with the kitchen towel. Tear or chop the spinach, arugula, celery, and mint leaves ito bite-sized pieces. Toss everything but the oil and lemon juice. Drizzle the olive oil and lemon juice over the salad, toss, and serve.
