Guest guest Posted July 9, 2003 Report Share Posted July 9, 2003 I made this up yesterday, and it came out pretty well, thought I'd share * Exported from MasterCook * Tofu Salad Recipe By : coolbana Serving Size : 6 Preparation Time :0:20 Categories : American Food Processor Cooking Soy Foods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Stalks Celery Ribs -- Diced Fine 1 Medium Carrot -- Shredded 6 Whole Scallion -- Chopped Fine 1/2 Cup Parsley Sprigs -- Chopped Fine 2 Tablespoons Dill Weed, Fresh -- Chopped Fine 2 Sweet Gherkins -- Chopped Fine 1 Sour Pickle -- Chopped Fine 1/2 Whole Roasted Red Peppers -- Chopped Fine 1 Tablespoon Soy Mayonnaise 2 Tablespoons Tahini 1 Tablespoon Tamari Soy Sauce 2 Tablespoons Nutritional Yeast 1 Package Tofu, Firm -- Silken 6 Bagels -- Sliced 6 Ounces Sharp Cheddar Cheese -- Thinly Sliced 1 Tomato -- Thinly Sliced Mix first 12 ingredients with tofu, mash together to spreadable consistency spread on bagels, top with tomato and cheddar. toast in oven until cheese melts - - - - - - - - - - - - - - - - - - Serving Ideas : grapes and carrot sticks NOTES : I use fresh herbs from my garden. and spring onions. do the veggies all in the food processor, pulse to get fine chop could also serve cold in a sandwich, or on crackers or rice cakes Nutr.
