Guest guest Posted July 21, 2003 Report Share Posted July 21, 2003 if you like onions and tomato, this lentil soup has plenty of both -- to try * Exported from MasterCook * Tomato Lentil Soup Recipe By :Anosos Corporation, Sarasota, FL Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Tablespoon olive oil 2 cups chopped onion 1 cup sliced celery 1/2 cup thinly sliced carrot 6 cups water 1 cup dried lentils 6 ounces tomato paste 1/2 cup dry red wine 1/4 cup chopped fresh parsley 3 vegetarian vegetable bouillon cubes Salt and pepper to taste Parmesan cheese (not included in nutritional info) Saute the onion, celery and carrot i the olive oil. Add water and dried lentils. Bring to a boil; simmer until tender. Add remaining ingredients and simmer for 5 to 10 minutes until aromatic. Serve hot; offer parmesan as a garnish.
