Cucumbers with Garlic Yogurt

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 large cucumbers -- seeded and thinly sliced

1 small red onion -- thinly sliced

1/4 cup rice vinegar

OR white vinegar and water -- equally

1 tablespoon fresh lemon juice

1 large clove garlic -- minced

1 tablespoon minced fresh basil -- or parsley

- OR a mixture

salt

freshly ground pepper

3/4 cup plain low-fat yogurt

- OR soy yogurt

 

Slice cucumbers and onion. Place in a medium mixing bowl; set aside. In a

small bowl, mix vinegar, lemon juice, garlic, herbs, and salt and pepper to

taste. Stir in yogurt; pour over cucumber and onion. Cover, chill, and toss

before serving. Makes 4 servings.
