PS: I just made this dish, it hasn't had a chance to meld in fridge yet and I can already tell it's cooly awesome tasting. I am making myself stop tasting. Brenda * Exported from MasterCook * Cucumbers with Garlic Yogurt - correction Recipe By :Vegetarian Times " Vegetarian Beginner's Guide " Serving Size : 4 Preparation Time :0:00 Categories : Cucumbers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large cucumbers -- seeded and thinly sliced 1 small red onion -- thinly sliced 1/4 cup rice vinegar OR white vinegar and water -- equally 1 tablespoon fresh lemon juice 1 large clove garlic -- minced 1 tablespoon minced fresh basil -- or parsley - or thyme - OR a mixture salt freshly ground pepper 3/4 cup plain low-fat yogurt - OR soy yogurt Slice cucumbers and onion. Place in a medium mixing bowl; set aside. In a small bowl, mix vinegar, lemon juice, garlic, herbs, and salt and pepper to taste. Stir in yogurt; pour over cucumber and onion. Cover, chill, and toss before serving. Makes 4 servings.
