this was published in 1993 -- i'm thinking we have more choices in tofu these

days. perhaps a baked smoked tofu would be good in this recipe.

Couscous Tacos

14 1/2 ounces mexican-style stewed tomatoes

1 cup water

1/4 cup chopped onion

5 teaspoons taco seasoning mix

2/3 cup couscous

8 ounces firm or extra-firm tofu -- drained, finely chopped

10 taco shells -- warmed

1 1/2 cups shredded lettuce

2/3 cup shredded cheddar cheese

salsa

 

1. In a medium saucepan combine undrained stewed tomatoes, water, onion, and

taco seasoning mix. Bring to a boil. Stir in couscous and tofu. Cover; remove

from heat. Let stand for 5 minutes.

 

2. Spoon couscous mixture into taco shells. Top with lettuce and cheese. Serve

with salsa. Makes 5 servings.

 

Nutrition info nation per serving. 365 calories, 18 g protein, 45 g

carbohydrate, 15 g fat (4 g saturated), 16 mg cholesterol, 809 mg sodium, 475 mg

potassium.
