Guest guest Posted July 26, 2003 Report Share Posted July 26, 2003 stef, here's another recipe for when you get those wheat berries ;-) * Exported from MasterCook * Wheat Berry Walnut Salad in Papaya Shells Recipe By :Better Homes and Gardens Books Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 2/3 cup wheatberries 2 papayas 1 cup strawberries -- halved 1/2 cup sliced celery 1/2 cup vanilla yogurt 2 tablespoons mayonnaise or salad dressing 1/4 teaspoon ground ginger lettuce leaves 1/2 cup coarsely chopped walnuts -- toasted 1. In a small saucepan combine water and wheat berries. Bring to a boil; reduce heat. Cover and simmer about 1 hour or till wheat berries are tender. Drain and cool. 2. For papaya shells, use a sharp knife to cut the papayas lengthwise in half. Remove seeds. Cut out papaya pulp, leaving 1/4-inch thick shells. Cover and chill shells. Cut papaya pulp into 1/2-inch cubes. 3. In a large mixing bowl combine papaya cubes, cooked wheat berries, strawberries, and celery. For dressing, in a small bowl stir together the yogurt, mayonnaise or salad dressing, and ginger. Pour over wheat berry mixture, tossing gently to coat. If desired, cover and chill for up to 4 hours. 4. To serve, place papaya shells on individual lettuce-lined plates. Spoon wheat berry mixture into papaya shells. Sprinkle with walnuts.
