AND to have it taste and look wonderful. This does so I want to be sure that many folks get it. It's like a cheesecake. YUM. There is absolutely no way anyone would ever know the contents unless told. It's that 'normal' tasting and in consistency. I am going to take it to our huge family campout...where only 1 person must have dairy-free...and I know everyone will love that this is healthy, cool and good. One other thing I liked: there is NOTHING to making this. Open everything and throw into a mixer or food processor...pour into shell. The only negative was that it seemed a bit tart; I over-did the fresh lime peel, for one thing. But next time I'm going to make my own shell (instead of using the Keebler) and I will perhaps add more sugar. OR I might just use more honey in the filling. The honey I had was old and had crystalized...I wonder fresh would be better and sweeter. BUT, no matter... it's just good even on the tart side. Enjoy, Brenda * Exported from MasterCook * Key Lime Pie Recipe By :Mori-Nu - website (see below) Serving Size : 8 Preparation Time :0:00 Categories : Pie Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package mori-nu silken lite firm tofu* 8 ounces tofu cream cheese 1/2 cup key lime juice* -- or regular lime juice 2 teaspoons grated lime rind 2 packages mori-nu mates vanilla pudding mix 1 tablespoon honey 1 graham cracker pie shell *Mori-Nu Silken Firm Tofu may be substituted *I used " Nellie & Joe's Famous Key West Lime Juice " (keylimejuice.com) Drain excess water from tofu. Blend tofu with lime juice in a food processor [i used mixer] until completely creamy and smooth. Add the rest of ingredients; re-blend until smooth. Pour mixture into a pie shell and chill for 2-3 hours. Servings: 8. Next time I will make homemade shell because the pie filling is a little tart and perhaps a nice homemade shell would is sweeter than the Keebler I used...or could be made sweeter.
