Guest guest Posted July 26, 2003 Report Share Posted July 26, 2003 * Exported from MasterCook * Mushroom & Onion Egg Bake - TNT Recipe By :All Time Family Favorites Breakfast & Brunch (1995) Serving Size : 6 Preparation Time :0:00 Categories : Eggs Main-Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 4 green onions -- chopped 4 ounces mushrooms -- sliced [i used drained canned mushrooms] 1 cup lowfat cottage cheese 1 cup sour cream 6 eggs 2 tablespoons all-purpose flour 1/4 teaspoon salt 1/8 teaspoon freshly ground pepper 1 dash hot pepper sauce 1. Preheat oven to 350. Grease shallow 1-quart baking dish. 2. Heat oil in medium skillet over medium heat. Add onions and mushrooms; cook until tender. Set aside. 3. In blender or food processor [i used mixer], process cottage cheese until almost smooth. Add sour cream, eggs, flour, salt, pepper and hot pepper sauce; process until combined. Stir in onions and mushrooms. Pour into greased dish. Bake about 40 minutes or until knife inserted near center comes out clean. Makes about 6 servings. REVIEW: Similar to green chili egg bake I've made for years (but that has cheese and butter)...this is a nice change and I was getting tired of the former. We really liked this dish. Jerry gave it an 8 [1 to 10 scale]; he seldoms gives any dish more than a 7.
