Guest guest Posted August 18, 2003 Report Share Posted August 18, 2003 I recently made a version of this dish -- Madhur Jaffrey's recipe for Green Beans with Black Mustard Seeds from her Indian Cooking book. A simple dish with seeds and garlic; a little sugar. The addition of coconut and hing looks good too. Brenda -- this uses asafoetida. * Exported from MasterCook * Gujarati Green Bean and Coconut Salad Recipe By :Kurma dasa: Great Vegetarian Dishes Serving Size : 0 Preparation Time :0:00 Categories : Veg Sides Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 13 ounces French stringless beans -- 3-inch lengths 2 tablespoons vegetable oil 1/2 teaspoon black mustard seed 1/4 teaspoon yellow asafoetida powder 1 teaspoon fresh green chili -- seeded, finely chopped 1/2 teaspoon salt 1/2 teaspoon sugar 1/4 cup roasted peanut powder 1/2 cup grated fresh coconut 1. Boil the French beans in lightly salted water until they are cooked but still green and firm. Drain, rinse with cold water, drain again, and allow to cool in a bowl. 2. Saute the mustard seeds in hot oil in a heavy pan over moderate heat until the seeds crackle. Add the asafoetida [hing] and saute momentarily. 3. Add these spices to the beans; toss. Add green chili, slat, sugar, peanut powder and grated fresh coconut to the bowls and toss. Serve at room temperature. TIPs - Dry roasted peanuts may be ground to a fine powder. Replace asafoetida with a combination of ground dried garlic and onion (to taste).
