Guest guest Posted August 18, 2003 Report Share Posted August 18, 2003 with a chile heat and Indian hing. * Exported from MasterCook * Hawaiian Brown Rice Salad Recipe By :Kurma dasa: Great Vegetarian Dishes Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups cooked long-grain brown rice -- salted, chilled 1 small cucumber -- peeled, seeded, diced 4 radishes -- crisp, finely sliced 3 pineapple slices -- (fresh) diced 2 ripe tomatoes -- (firm) diced 1/2 small red bell pepper -- diced 1/2 small green bell pepper -- diced 1/4 cup cooked green peas 1/4 cup cooked corn kernels -- (Niblets) 1/2 celery stalk -- finely chopped 2 lettuce leaves -- chiffonade 2 fresh hot green chilies -- julienned 1/2 cup finely chopped parsley ADDITIONS: 1 teaspoon olive oil 1/4 teaspoon yellow asafoetida powder 1 cup Italian salad dressing lettuce leaves -- for decoration 1. To prepare chiffonade: use inner leaves of lettuce, roll up and cut into long, wafer thin slices. To julienne: cut the chile lengthwise, remove seeds and stems. Cut into long wafer thin slices. 2. Place all the ingredients (except those market " additions " ) into a large bowl. 3. Saute the asafoetida in olive oil in a small pan. Pour this into the bowl of rice and vegetables. Mix well. 4. Toss the salad with the Italian dressing. Serve the salad on a bed of crisp lettuce leaves. - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 352 Calories; 17g Fat (41.2% calories from fat); 5g Protein; 48g Carbohydrate; 5g Dietary Fiber; 0mg Cholesterol; 248mg Sodium.
