Guest guest Posted September 13, 2003 Report Share Posted September 13, 2003 * Exported from MasterCook * Vegan Jamaican Bean Soup Recipe By :Al Chase, Institute for Culinary Awakening, Santa Fe, NM Serving Size : 8 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups Kidney Beans (canned -- or pre-cooked day before) 4 cups Black Beans (canned -- or pre-cooked day before) 2 cups Yellow onion 1 tablespoon Organic coconut butter (Omega Nutrition) -- (non-hydrogenated) 2 cups Red onion -- medium dice 4 Garlic cloves -- minced 2 cups Carrots -- large dice 2 cups Celery -- medium dice 1 cup Jewel Yams chopped fine -- medium dice 2 cups Red pepper [bell] -- medium dice 1 teaspoon dried red pepper flakes 1 cup Cilantro sprigs -- chopped fine 6 cups Vegetable Stock 2 cups Filtered water 1/2 tablespoon Sea salt 2 teaspoons Cumin seed 1 teaspoon Garam masala Cook beans day before to tender, or use canned. Heat H.D. pot for 1 minute, add coconut butter and onions, Saute 5 mintues to soft, almost golden. Add garlic, carrots, celery, pepper, saute 2 minutes more. Add all dried spices, toss well, cook one minute. Add hot vegetable stock/water mixture and beans. Bring to a boil, then reduce to simmer. Cool about 1 hour. Taste, re-season as needed. Present in deep soup bowls. Garnish with cilantro. Jewel Yam: red skin, orange flesh Sweet Potato.
