Feta Brunch Bake

1 medium red bell pepper

20 ounces fresh spinach

6 eggs

6 ounces crumbled feta cheese

1/3 cup chopped onion

2 tablespoons chopped fresh parsley

1/4 teaspoon dried dill weed

1 dash black pepper

 

1. Cover broiler pan with aluminum foil. Set broiler pan about 4 inches from

heat. Preheat broiler. Place bell pepper on aluminum foil. Broil 15 to 20

minutes until blackened on all sides, turning every 5 minutes with tongs.

 

2. Place blackened bell pepper in paper bag. Close bag; set aside to cool 15 to

20 minutes.

 

3. Cut bell pepper in half; place pepper halves on cutting board. Peel off skin

with paring knife; rinse under cold water to remove seeds. Cut bell pepper into

1/2-inch pieces.

 

4. Separate spinach into leaves and wash in cold water. Pat dry with paper

towels.

 

5. Remove and discard stems from spinach leaves.

 

6. Heat 1 quart water in 2-quart saucepan over high heat to a boil. Add spinach.

Return to a boil; boil 2 to 3 minutes until crisp-tender. Drain spinach from

saucepan, then immediately plunge into cold water.

 

7. Drain spinach; let stand until cool enough to handle. Squeeze spinach between

hands to remove excess water. Finely chop with chef's knife.

 

8. Preheat oven to 400F. Grease 1-quart baking dish.

 

9. Beat eggs in large bowl with electric mixer at medium speed until frothy.

Stir in bell pepper, spinach, cheese, onion, parsley, dill weed and black

pepper.

 

10. Pour egg mixture into prepared dish. Bake 20 minutes or until set. Let stand

5 minutes before serving. Garnish as desired.

 

Makes 4 servings.
