I added corn kernals to mine also You could always leave out the cayenne and put in scotch bonnet peppers instead! Black Bean Chili Prep: 15 min, Cook: 20 min. 2 tsp. unsalted butter 2/3 cup onion, finely chopped 1 lb. ground beef 2 lbs. black beans, drained 3/4 tsp. turmeric 1/4 tsp. cayenne pepper 1/4 tsp. pepper 4 scallions, sliced 2 cups plain lowfat yogurt Melt butter in a heavy nonstick skillet over medium high heat. Saut onion 5-7 minutes or until golden. Add ground round and saut 3-4 minutes or until meat is lightly browned. Stir in black beans, turmeric, cayenne and pepper and saut 3-4 minutes. Reduce heat to medium low. Stir in half the scallions. Saut 2-3 minutes, stirring constantly until scallions are softened. Remove from heat, sprinkle with remaining scallions and serve with yogurt. Per serving: calories 596, fat 24.2g, 37% calories from fat, cholesterol 91mg, protein 42.5g, carbohydrates 51.8g, fiber 17.5g, sugar 20.0g, sodium 383mg, diet points 10.9.
