question about gelatin

Hello All,

 

It's a quiet list, but I was just wondering if someone could answer a

question for me. Whena recipe calls for unflavoured gelatin, what is a

good vegetarian substitute?

At the health food stores you can get a product called agar-agar made

from seaweed - Jenny

Emes makes an all-vegetable gelatin from carrageenan, locust bean gum and

cottonseed gum. You can buy it plain in bulk an use it as normal unflavored

gelatin. It should be dissolved in hot liquid and will gel as it cools. It

takes 1 1/2 teaspoons Emes Kosher Jel to thicken each cup of liquid. I've used

it to make homemade " Jello " using fruit juices. Emes also makes a variety of

flavored vegetarian jelled dessert mixes (just like Jello--even easy to make).
