Guest guest Posted October 8, 2003 Report Share Posted October 8, 2003 * Exported from MasterCook * Sunshine Dinner Pie Recipe By :Karen Alexander Serving Size : 6 Preparation Time :0:00 Categories : Main Dish Mc Dougall Plan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large sweet potatoes 2 tablespoons molasses -- regular 2 tsp. ground ginger 1/4 tsp. black pepper 2 cups butternut squash -- peeled and chopped into 2 " pieces 8 oz. mushrooms -- sliced 2 parsnips -- peeled and sliced 1 turnip -- peeled and diced 2 carrots -- diced 1 large onion -- chopped 3 cups vegetable broth preheat oven to 375 pierce sweet potatoes and place in oven with foil underneath on rack below to save clean up. Bake until very tender about one hour. Remove and reduce oven temp to 350. meanwhile, heat a small amount of water in a soup pot over medium heat. Saute the onions and mushrooms for 5 minutes. Add the squash, carrots, parsnips and turnip along with the veggie broth. bring to a boil, cover, reduce heat and simmer for 20 minutes. peel the baked sweet potatoes. place them in a large bowl, mash. mix in molasses, ginger and pepper. using slotted spoon, place squash mixture into a large casserole dish. Spoon the sweet potato mixture over the squash mixture. Cover and bake for 45 minutes. Remove cover and bake 10 minutes more. EVERYBODY loves this dish.
