I am looking for some very good tasting transiting recipes that will definately " sell " my family on eating less meat. I would like these recipes to be high in protein as well. Any suggestions? I substitute crumbles for the better than burgers (if I have them around) and sautee rather than microwave the onions (don't have a microwave). * Exported from MasterCook * South Of The Border Lasagna Recipe By : The Cooking Cardiologist, by Richard Collins, page 122 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups Morningstar Farms Better N Burgers -- thawed 1 cup onion -- chopped 2 tablespoons jalapeno peppers -- chopped fine 2 tablespoons chili powder 14 1/2 ounces canned tomatoes -- stewed 15 ounces canned Fat-Free Hormel Vegetarian Chili salt and pepper -- to taste 2 cups baked tortilla chips low-fat -- crushed 1 1/4 cups firm lite tofu 1 envelope fat-free ranch salad dressing mix Serving size: 4 Place chopped onion in a small microwave dish with cover, microwave on high 3 minutes. In large bowl combine crumbled Better N Burgers, onion, jalapeno peppers, chili powder, stewed tomatoes, chili, salt and pepper. Mix well. Place crushed chips on the bottom of a sprayed 9x9 inch baking dish. Spread Better N Burger mixture over chips. Place tofu in a food processor and process until creamy, add dry salad dressing mix, if mixture seems a little thick add very small amount of water. Spread this over the top of casserole.
