Guest guest Posted October 9, 2003 Report Share Posted October 9, 2003 * Exported from MasterCook * Potatoes and Spinach Yellow Curry Sauce Recipe By :Sue Staples Serving Size : 4 Preparation Time :0:00 Categories : Specific Food Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 garlic cloves -- chopped finely 1 piece galangal (1-inch) -- chopped finely 1 lemon grass stem -- chopped finely 1 teaspoon coriander seed 3 tablespoons vegetable oil 2 teaspoons red curry paste 1/2 teaspoon turmeric 1 cup light coconut milk (scant) 9 ounces potatoes -- peeled 1/2 cup vegetable bouillon (scant) 3 cups young spinach leaves 1 small onion -- sliced thinly into rings 1. Place the garlic, galangal, lemon grass, and coriander seeds in a mortar and pound with a pestle until a smooth paste forms. 2. Heat 2 tablespoons of the oil in a wok. Stir in the paste and stir-fry for 30 seconds. Stir in the red curry paste and turmeric, then add the coconut milk and bring to a boil. 3. Cut the potatoes into 3/4 inch cubes and add to the wok with the bouillon. Return to a boil, then lower the heat, and simmer, uncovered, for 10 to 12 minutes until the potatoes are almost tender. 4. Stir in the spinach and simmer until the leaves wilt. 5. Meanwhile, cook the onion rings in the remaining oil until they are crisp and golden brown. Arrange them on top of the curry just before serving. COOK'S TIP: Choose a firm, waxy potato for this dish, one that will keep its shape during cooking, rather than a mealy variety which breaks up during cooking.
