Guest guest Posted October 21, 2003 Report Share Posted October 21, 2003 * Exported from MasterCook * Sweet Potato Souffle With Pecan Topping Recipe By :Best of the Best From Pennsylvania Serving Size : 10 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 pounds sweet potatoes -- peeled (not yams) 3/4 cup butter -- softened 1 12-ounce can evaporate milk 3 eggs -- beaten 1/2 cup sugar 3 teaspoons vanilla TOPPING: 1 cup brown sugar 1/3 cup flour 1/4 cup melted butter 1/2 cup chopped pecans 1 cup coconut Preheat oven to 350F. Boil sweet potatoes until tender. Drain and mash. Beat together with remaining ingredients. Pour into greased 3-quart casserole. Combine topping ingredients until crumbly and sprinkle on top. Bake for 30-40 minutes or until browned. This can be made ahead and refrigerated until baking. Serves 10-12.
