here's another agar recipe. it looks really good -- i'd like to try it.

 

> Orange Honey Mint Terrine

> Amount Measure Ingredient -- Preparation Method

> 8-10 oranges

> 2 1/2 cups fresh orange juice

> 2 tablespoons honey

> 4 teaspoons agar

> 3 tablespoons fresh mint -- chopped

> 2 orange peels zest

> 1. cut the peels and membranes from the oranges and then slice thinly,

> removing the seeds and saving the juice.

> 2. heat the orange juice (from the juice as well as from the oranges)

> with the honey, zest, and agar until everything is dissolved.

> 3. put the slices of orange in a 2-pound loaf pan with mint between

> layers of orange. slowly pour the hot orange juice mixture on top, then

> tap the pan lightly so it all settles.

> 4. chill the terrine overnight, or until it is quite firm. if it

> doesn't come out easily, dip the pan briefly in very hot water before
