Guest guest Posted October 24, 2003 Report Share Posted October 24, 2003 * Exported from MasterCook * Fiery Lentil Soup Recipe By :Orla Broderick Serving Size : 6 Preparation Time :0:00 Categories : Specific Course Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon sunflower oil 1 large onion -- chopped 4 garlic cloves -- crushed 2 teaspoons ground turmeric 2 teaspoons garam masala 1 bay leaf 6 cardamom pods -- crushed 1 cup red or orange lentils -- heaping measure, rinsed 3 3/4 cups vegetable stock salt and black pepper 4 cups roughly chopped fresh spinach leaves 1 lime -- juiced plain yogurt chopped fresh cilantro Heat the oil in a large saucepan. Add the onion and fry for 5 to 6 minutes until golden brown. Stir in the garlic, turmeric, garam masala, bay leaf, and cardamom pods and cook slowly for 1 minute until the spices are lightly toasted. Add the lentils to the saucepan with the stock; season well. Simmer for about 20 minutes, or until the lentils are just tender. Stir in the spinach and cook for 5 minutes longer. Season to taste and add the lime juice. Ladle into bowls and add a spoonful of yogurt and a sprinkling of cilantro. Serve hot.
