Guest guest Posted October 27, 2003 Report Share Posted October 27, 2003 * Exported from MasterCook * Filly Inn Chicken Curry with Mango (English) Recipe By :Restaurant in the Filly Inn Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb. chicken breast 2 bay leaves 2 pieces cassia or cinnamon 2 fl. oz. mango pulp 2 oz. desiccated or creamed coconut 1 oz. turmeric 4 fl. oz. double cream at room temperature 3 crushed cardamom pods 3 tbs. ghee 2 tbs. fresh chopped coriander Marinade chicken with 2 bay leaves and 2 pieces of cassia in 2 tbs. of vegetable oil, covered and refrigerated for 24 hours. Fry off chicken in oil then cover with water, cook until tender then put to one side. Heat ghee in a frying pan, add turmeric and cardamom pods and cook for 1 minute. Add chicken and continue to cook for 2 minutes. Add mango pulp and coconut. Add cream and continue to cook until reduced by half. Finish with chopped coriander and serve with rice and pickles.
