Taste of Thai: Rice Noodles with Sesame Basil Pesto

4 ounces Rice Noodles -- (from 8-oz box)

2 Tablespoons sesame seeds

1 cup firmly packed basil leaves

4 cloves garlic

2 Tablespoons olive oil

2 Tablespoons rice wine vinegar

1 teaspoon sugar

1 teaspoon salt

2 Tablespoons hot chili oil

 

Tip: Traditionally rice noodles are softened by soaking for up to an hour. To

save time, we’ve used a quick-boil method.

 

1. Preheat oven to 300F.

 

2. Put a large pot of water (2 quarts or more) on to boil, with one tablespoon

salt.

 

3. Spread the sesame seeds on a pan. Toast in oven for about 2 minutes or until

golden. Watch them carefully so they don’t burn. Remember: brown means bitter!

 

4. Put the basil, garlic, sesame seeds, chili oil, olive oil, vinegar, sugar,

and salt in food processor. Pulse until smooth.

 

5. When the water boils, add the rice noodles. Stir once to separate the

noodles.

 

6. Boil 5 to 7 minutes, until noodles are tender but still firm (al dente).

 

7. Drain the noodles and very briefly run warm water over them. Return to the

pot and toss with sauce.

 

Yield: Serves 4 hungry people

Time: 20 minutes start to finish
