Some chiles chopped into this would be sooo good. @@@@@ Chilaquiles Zona Rosa | Passionate Vegetarian by Crescent Dragonwagon | 12 corn tortillas Cooking spray 3 cups medium salsa 16 oz neufchatel reduced fat cream cheese 2 lg eggs 2 tbsp cornstarch 2 sm zucchini, cut crosswise in 1/4 " rounds 1.25 cups fresh corn kernels 1 cup Monterey jack cheese (4 oz), shredded | Quarter the tortillas. Place pieces on jellyroll pan. Let stand for at least 1 hour or overnight. Coat 9x13 " baking dish with cooking spray. Spread 1/2 cup salsa over bottom. Scatter 1/3 of tortilla pieces over salsa. Place 1 cup of remaining salsa in food processor with cream cheese, eggs and cornstarch. Chop until well combined. In separate bowl, combine zucchini with fresh corn. Spoon 1/2 of egg mixture over tortillas in dish. Scatter vegetables over filling. Drizzle another 1/2 cup salsa over top. Make another layer using 1/3 of tortillas. Cover with remaining cheese mixture. Top with remaining tortillas. Pour remaining salsa over top. Bake, covered, at 350 degrees F for 40 minutes. Uncover. Sprinkle with shredded cheese. Bake 12 minutes.
