Guest guest Posted November 3, 2003 Report Share Posted November 3, 2003 * Exported from MasterCook * Carrot and Lentil Soup with Coriander Recipe By :Rosamond Richardson Serving Size : 4 Preparation Time :0:00 Categories : Soups Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ounces red lentils -- soaked 30 minutes 1 1/2 pounds carrots -- scrubbed, trimmed 1 large onion -- sliced 5 cups water or vegetable stock 1 tablespoon dried mixed herbs 1 large bunch fresh coriander -- finely chopped salt and black pepper 4 sprigs fresh coriander -- for garnish 1. Drain the lentils. Put into a saucepan with the carrots and onion and cover with the water or stock. Bring to the boil and add the herbs. Simmer covered, for 45 minutes. 2. Pour into the food processor and blend to a puree. Season to taste with salt and pepper, then stir in the chopped coriander (cilantro). 3. To serve, warm through, pour into soup bowls and garnish with a sprig of fresh coriander.
