Thanksgiving Recipe?

I am looking for something to serve as the 'entree' for Thanksgiving. I used

to have a great recipe for a garbanzo rice loaf that had all the turkey

seasonings, so it worked really well. If I remember correctly, it was in 10

Talents cookbook, which I no longer have. The reason this loaf was so good,

in

addition to the taste, was that it held together. Most loaves I try to make

do

not stay together very well.

My copy of Ten Talents is an older one, and I couldn't find the loaf you

mentioned. I did, however, find the following recipe, which has all the

ingredients you describe. For a loaf, I'd lower the temperature to 350 F and

bake for an hour. You may also wish to cover it with foil for part of the baking

time in order to prevent excessive drying. The number of servings was not

specified, and is merely a guess based on ingredient quantities.

Garbanzo Croquettes

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/2 cups cooked garbanzos -- coarsely blended

2 1/2 cups cooked brown rice

2 slices bread -- crumbled, soaked in

1/4 cup garbanzo broth

2 tablespoons peanut or nut butter

1/2 cup chopped pecans -- finely chopped

2 tablespoons chopped onion, OR

1 tablespoon onion powder

2 tablespoons soy sauce

2 tablespoons oil

1/2 teaspoon poultry seasoning

1/2 teaspoon salt

1/2 teaspoon celery seed

bread crumbs -- to make desired consistency

 

Mix well with hands and form into croquettes. Roll in breading meal and sprinkle

with oil. Bake at 375 F for 45 minutes. Serve with gravy.

 

Can also be shaped into patties.
