Mushrooms_dried and fresh together

I am looking for recipes that use both dried and fresh mushrooms. I

remember a soup or gravy recipe that used this combination but I

can't find it. Or, perhaps a caserole?

this is for patricia parker. if you have dried porcini, grind some in the food

processor or a coffee bean grinder -- add to soups, sauces, gravies etc for a

little extra flavor. Also look for recipes that ask for assorted mushrooms.

Hydrating Dried Mushrooms

 

Many mushroom varieties come in both fresh and dried forms. One such mushroom,

the shiitake, is used in many recipes in this book. To hydrate dried mushrooms,

do the following:

 

1. Soak the mushrooms in hot water until they soften. (Soaking time varies with

type and size.)

 

2. Rinse the gills (the underside) under running water to clean them of any dirt

or sand.

 

3. Squeeze the mushrooms in your fist to thoroughly wring out the water.

 

4. Remove and discard any tough woody stems.

 

The hydrated mushrooms can now be sliced, minced, chopped, or used in their

entirety. Dried mushrooms will keep indefinitely in an airtight container or in

the freezer.
