Here are some recipes I formatted, from the Boca website. I have pictures also,

Boca Breakfast Fritatta

1/2 cup chopped green pepper

1/2 cup chopped onion

2 cups chopped cooked red potatoes

1 tablespoon fresh rosemary or 1 tsp. dried rosemary

1/4 teaspoon black pepper

1/4 teaspoon salt

1 package (8 oz.) frozen boca breakfast links or patties --

chopped

6 large eggs or 12 oz. egg substitute

3/4 cup skim milk

1 cup (4 oz.) shredded reduced fat italian cheese blend

 

HEAT oven to 350°F. Whisk eggs and milk together; set aside. COOK and stir onion

and green pepper with oil in oven-proof 10-inch skillet, on medium-high heat for

2 minutes. Add potatoes, breakfast link pieces and seasonings; cook 3 minutes

more. Remove from heat; sprinkle with cheese. Pour in egg mixture. BAKE 40 to 45

minutes or until set in center. Makes 6 servings. Tips: Bake mixture in 10-inch

quiche dish or pie plate sprayed with no stick cooking spray if no oven-proof

skillet available. Substitute 10 large egg whites for eggs, if desired.

Boca Tacos

2 cups frozen boca ground burger

cup salsa

1 teaspoon chili powder

1/4 teaspoon ground cumin

6 tortillas (flour -- corn or whole wheat), warmed

shredded lettuce -- chopped tomato, onion, shredded

cheese and cilantro (optional)

 

HEAT and stir ground burger, salsa and seasonings in skillet on medium heat 6 to

8 minutes or until thoroughly heated. FILL tortillas with crumbles mixture and

desired toppings. Makes 6 tacos. Tip: Use hot salsa for spicy tacos. Try taco

crumbles mixture to make nachos.

Boca Sloppy Joes

1/4 medium onion -- finely chopped

1 teaspoon oil

1 pouch (1 cup) frozen boca meatless ground burger

1/2 cup barbecue sauce

1 tablespoon sweet pickle relish

2 sandwich rolls -- split

 

COOK and stir onion in oil in small nonstick skillet on medium heat 3 minutes or

until tender. STIR in ground burger, barbecue sauce and relish. COOK 3 minutes

or until thoroughly heated. Serve on rolls. Makes 2 sandwiches. To Double:

Double all ingredients. Special Extra: Try different barbecue sauces for a

twist.

Boca Lasagna

2 cups frozen boca ground burger

1 jar (28 oz.) spaghetti sauce

1 teaspoon dried oregano

8 lasagna noodles -- cooked, drained (8-10)

1 container (16 oz.) part-skim ricotta cheese

2 egg whites or

1/4 cup cup egg substitute or 1 egg

1/2 cup shredded parmesan cheese

2 tablespoons chopped fresh basil or 1 tsp. dried basil

1 clove garlic -- minced

2 cups (8 oz.) shredded part-skim mozzarella -- divided

 

HEAT frozen ground burger, spaghetti sauce, and oregano in saucepan on medium

heat 6 to 8 minutes or until thoroughly heated, stirring occasionally. MIX

ricotta cheese, Parmesan, egg white, basil and garlic in small bowl. Spread 1

cup of the sauce mixture in bottom of greased 13x9-inch baking dish. Top with

half of the noodles, half of the ricotta cheese mixture, 1 cup sauce mixture and

1 cup mozzarella cheese; repeat layers. BAKE at 375°F for 30 to 35 minutes or

until thoroughly heated. Let stand 10 minutes before cutting. Makes 8 servings.

Make Ahead Tip: Prepare as directed, except for last layer of mozzarella cheese.

Refrigerate, covered, up to 24 hours. Bake, covered, 45 minutes. Top with

reserved cheese; bake 5 minutes more.
