Boca® Sausage Skillet

Amount Measure Ingredient -- Preparation Method

1 tablespoon oil

2 cups frozen shredded hash brown potatoes

1 1/2 cups cholesterol-free egg substitute or 6 eggs -- beaten

5 frozen boca meatless breakfast links -- chopped

1/3 cup sliced green onions

1/3 cup reduced fat shredded sharp cheddar cheese

chopped tomatoes (optional)

 

HEAT oil in medium nonstick skillet on medium-high heat. Add potatoes; cook 8 to

10 minutes or until potatoes are browned, stirring occasionally. Spread potatoes

to evenly coat skillet. MIX egg substitute, link pieces, and onions in small

bowl. Pour egg mixture evenly over potatoes in skillet. Reduce heat to medium

low; cover. COOK 12 minutes or until eggs are set. Remove from heat. Sprinkle

with cheese. Top with chopped tomato and freshly ground black pepper, if

desired. Cut into wedges to serve. Makes 6 servings. How To easily chop

sausage links, remove from freezer 5 to 10 minutes before use. Great Substitute:

Substitute 3 frozen BOCA Meatless Breakfast Patties for Links.

1 teaspoon olive oil

1 large red potato -- peeled, cut into 1/2-inch pieces

2 frozen boca breakfast patties -- cut into 1/2-inch

pieces

2 mushrooms -- chopped

1 tablespoon chopped onion

1/4 teaspoon garlic salt

 

HEAT oil in nonstick skillet on medium heat. Add potato; cover. Cook 8 to 10

minutes, stirring occasionally until tender. STIR in cut up patties, mushrooms

and onion. Cook and stir 5 minutes or until potato mixture is browned. Season

with garlic salt halfway through cooking. SERVE with catsup. Makes 2 servings.

Food Fact: Red potatoes hold their shape and brown better than Idaho or Russet

potatoes. To Double: Increase oil to 1 Tbsp. Double all other ingredients. Cook

in large skillet.

Boca® Breakfast Bake

Amount Measure Ingredient -- Preparation Method

1 tablespoon margarine or butter

8 ounces mushrooms -- finely chopped

1/2 cup dry bread crumbs

1 cup cholesterol-free egg substitute or 4 eggs -- beaten

5 frozen boca meatless breakfast links -- chopped

1/2 red or green bell pepper -- chopped

3 green onions -- sliced

1/8 teaspoon ground red pepper

 

MELT margarine in large nonstick skillet on medium-high heat. Add mushrooms;

cook and stir 8 minutes or until moisture evaporates. Remove from heat; add

bread crumbs. PRESS mushroom mixture onto bottom of 9-inch pie plate sprayed

with no stick spray to form crust. MIX egg substitute, link pieces, bell pepper,

onions and ground red pepper; pour over crust. BAKE at 350 degrees;F for 20

minutes or until mixture is set. Makes 6 servings. How To make chopping

easier, remove sausage from freezer 5 to 10 minutes before use. Use food

processor to finely chop mushrooms. Great Substitute: Substitute 3 BOCA Meatless

Breakfast Patties, chopped for Breakfast Links. To Double: Double all

ingredients; prepare and bake as directed in 13x9-inch baking dish for 25 to 30

minutes.
