Add potatoes; cook 8 to 10 minutes or until potatoes are browned, stirring occasionally. Spread potatoes to evenly coat skillet. MIX egg substitute, link pieces, and onions in small bowl. Pour egg mixture evenly over potatoes in skillet. Reduce heat to medium low; cover. COOK 12 minutes or until eggs are set. Remove from heat. Sprinkle with cheese. Top with chopped tomato and freshly ground black pepper, if desired. Cut into wedges to serve. Makes 6 servings. How To easily chop sausage links, remove from freezer 5 to 10 minutes before use. Add mushrooms; cook and stir 8 minutes or until moisture evaporates. Remove from heat; add bread crumbs. PRESS mushroom mixture onto bottom of 9-inch pie plate sprayed with no stick spray to form crust. MIX egg substitute, link pieces, bell pepper, onions and ground red pepper; pour over crust.
