Breakfast Quesadillas

1 frozen boca breakfast patty or 2 frozen boca breakfast

links

1 flour tortilla (6 to 8 inch)

1 tablespoon light cream cheese

salsa (optional)

 

HEAT breakfast patty or links as directed on package. SPREAD tortilla with cream

cheese, top with chopped patty or links; fold tortilla in half. HEAT tortilla in

nonstick or lightly oiled skillet on medium heat about 2 minutes on each side.

Serve with salsa, if desired. Makes 1 serving. Tip: For a zesty twist, spoon a

small amount of salsa on tortilla mixture before folding.

1 cup egg substitute or 4 eggs -- beaten

1 cup skim milk

2 green onions -- sliced

3 frozen boca breakfast patties -- coarsely chopped or

broken apart

1 cup shredded colby & monterey jack cheese

4 flour tortillas (8-inch) -- heated

salsa (optional)

 

BEAT egg substitute and milk together. Add onion and patty pieces. COOK and stir

egg mixture in nonstick or lightly oiled skillet on medium heat, until set. Top

with cheese; cover until melted. SPOON about 1/2 cup egg mixture onto each warm

tortilla. Fold in ends and roll-up burrito style. Serve immediately. Serve with

salsa, if desired. Makes 4 servings. Substitutions: Substitute 1 Tbsp. chopped

onion for the green onions. Substitute shredded Cheddar cheese for the Colby &

Monterey Jack.

Boca™ Pasta Bake

Amount Measure Ingredient -- Preparation Method

1 box (12 oz.) frozen boca ground burger

8 ounces mostaccioli or penne -- cooked, drained

1 jar (28 to 30 oz.) spaghetti sauce

3/4 cup grated parmesan cheese -- divided

2 cups (8 oz.) shredded reduced fat mozzarella cheese

 

MIX ground burger, pasta, spaghetti sauce and 1/2 cup of the Parmesan cheese.

SPOON into 13x9-inch baking dish sprayed with no stick spray. Top with

mozzarella cheese; sprinkle with remaining 1/4 cup Parmesan cheese. BAKE at

375°F for 25 to 30 minutes. Makes 6 servings. Special Extra: Stir in 1 box (10

oz.) chopped frozen spinach, thawed, well drained with crumbles mixture before

spooning into baking dish.
