Morning Bagel Sandwich

1 frozen boca breakfast link -- quartered

1/4 cup cholesterol-free egg substitute or 1 egg -- beaten

1 tablespoon lowfat cottage cheese

1/8 teaspoon italian seasoning

1 bagel -- toasted

 

SPRAY microwavable coffee mug or measuring cup with no stick spray. PLACE link

pieces in mug, microwave on HIGH 10 seconds or until thawed. MIX egg substitute,

cottage cheese and Italian seasoning; pour over links in mug. Cover with plastic

wrap. Microwave on HIGH 1 to 1-1/4 minutes, stirring halfway through heating.

Let stand 1 minute to set. Serve on bagel. Makes 1 sandwich. Take Along Tips:

Wrap in aluminum foil for a great sandwich to go

2 frozen boca meatless smoked sausages

1 italian pizza crust (12 in.) or 2 crusts (6 in.)

1/4 cup barbecue sauce

1/2 cup shredded mozzarella & cheddar cheese

1/4 cup pineapple tidbits -- drained

1/4 green pepper -- sliced

1/4 small onion -- sliced

 

MICROWAVE sausages as directed on package; cut into slices. SPREAD pizza crust

with barbecue sauce; top with remaining ingredients. BAKE on cookie sheet at

450°F for 8 to 10 minutes or until cheese is melted. Makes 4 servings. TIP: To

grill; assemble pizzas as directed. Place pizza directly on gas grill on low

heat. Cover. Cook about 8 minutes; rotating occasionally, until bottom of pizza

is crisp and cheese is melted.

Easy One Skillet Stroganoff

1 medium onion -- thinly sliced

1 teaspoon oil -- (1-1/2)

2 pouches (1 cup each) frozen boca meatless ground burger

1/4 teaspoon garlic powder

1 can (14-1/2 oz.) vegetable broth

1 can (8 oz.) mushroom pieces and stems -- drained

3 cups medium egg noodles -- uncooked

1 container (8 oz.) reduced fat sour cream

chopped fresh parsley (optional)

 

COOK and stir onion in oil in large nonstick skillet until browned. ADD ground

burger, garlic powder, vegetable broth, mushrooms and noodles; mix well. Bring

to boil. Reduce heat to medium-low; cover. Simmer 10 to 12 minutes or until

noodles are tender. Remove from heat. ADD sour cream; mix well. Sprinkle with

chopped parsley. Makes 6 servings. Round Out The Meal: Serve with a crisp green

salad.

Classic Boca Chili

2 bell peppers (red -- yellow or green), cut into 1-inch

pieces

1 medium onion -- chopped (about 1/2 cup)

2 cloves garlic -- minced

2 teaspoons oil

1 can (15 oz.) black beans -- drained

1 can (15 oz.) chili beans in sauce

1 can (15 oz.) tomato sauce

1 can (14-1/2 oz.) diced tomatoes

1 package (12 oz.) frozen boca meatless ground burger

1 can (4 oz.) chopped green chilies -- drained

1 tablespoon chili powder

1/2 teaspoon ground cumin

 

COOK and stir peppers, onion and garlic in oil in large saucepan on medium-high

heat 3 minutes. ADD remaining ingredients. Bring to boil; reduce heat. SIMMER 30

minutes, stirring occasionally. Serve with chopped tomato, green onion, reduced

fat shredded cheese, light sour cream, hot pepper sauce or other favorite

toppings, if desired. Makes 8 (1 cup) servings. Special Extra: Add 1 cup frozen

kernel corn with remaining ingredients. Great Spicy Substitute: Substitute 1/4

cup chopped chipotle peppers in adobo sauce for chopped green chilies.
