Great! * Exported from MasterCook * Stir Fry Ginger Noodles with Tofu Recipe By :Jay Solomon Serving Size : 4 Preparation Time :0:00 Categories : Pasta Tofu Vegetarian Main {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 quarts water 8 ounces wide lo mein noodles 1 tablespoon peanut oil 1 red bell pepper -- seeded and cut into thin strips 8 ounces white mushrooms -- sliced 1 tablespoon minced fresh ginger root 2 cloves garlic -- minced 12 broccoli florets -- (10 to 12) 1/4 pound extra-firm tofu -- diced 1/2 cup vegetable broth 1/4 cup soy sauce 1 tablespoon rice vinegar 1 tablespoon toasted sesame oil 1 1/2 tablespoons peanut butter 1. In a large saucepan, bring the water to a boil over medium high heat. Add the noodles, stir, and return to a boil. Cook until the noodles are al dente, about 5 minutes, stirring occasionally. Drain the noodles in a colander. 2. In a large skillet or wok, heat the peanut oil over medium-high heat. Add the hell pepper, mushrooms, ginger, and garlic and stirring for 5 minutes. 3. Stir in the broccoli and tofu and stir-fry for 3 to 4 minutes. Stir in the broth. soy sauce, rice vinegar. and sesame oil and bring to a simmer. Cook, stirring, for 4 minutes. Reduce the heat to low and blend in the peanut butter. Fold in the lo mein noodles. 4. Transfer the mixture to serving plates and serve at once.
