I would love to have some suggestions on some basic menu items. When I was growing up and my family ate meat things seemed so much easier. You could have one night a goulash, another night hamburgers, another meatloaf, then pizza etc. From what I have seen there are no real simple recipes like that for vegetarians. Everything is more complicated. Maybe I just feel that way, because it is different types of foods and different then how I grew up learning to cook and plan meals. Does anyone else feel this way? So many times I will look at recipes and they will have one thing or another in it that I can not eat. Sometimes the food can be taken out, sometimes the food can be substituted, sometimes you can not make the recipe. Any suggestions will be appreciated. Guest guest Posted November 25, 2003 Report Share Posted November 25, 2003 Tresea, It looks as though you've got the pizza and hamburgers in earlier replies, now here's the Goulash:- * Exported from MasterCook * FIFTEEN MINUTE GOULASH Recipe By : Pocket Cook v5 Serving Size : 4 Preparation Time : 25 Categories : Main Meals Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Onion -- Finely Chopped 1 Clove Garlic -- Crushed 2 Carrots -- Diced 3 Medium Courgettes -- Diced 2 tb Olive Oil 1 tb Paprika 1 pn Nutmeg 1 tb Freshly Chopped Parsley (heaped) 1 tb Tomato Purée 1 cn Tomatoes 400g/14oz Tin 1 cn Red Kidney Beans 14oz Tin, Drained And Washed 1 cn White Kidney Beans 14oz Tin, Drained & Washed 140. ml Tomato Juice (¼ Pint) Or Stock Salt And Pepper Soured Cream Or Yogurt To Serve 1. Put the onion, garlic, carrots and courgettes into a pan with the olive oil and sauté for 5 minutes until softened. 2. Stir in the paprika, nutmeg, parsley and tomato puree. 3. Add the rest of the ingredients except cream or yogurt and cook over a low heat for 10 minutes. 4. Turn onto a hot serving dish and top with a little soured cream or yogurt. This quick and easy goulash is best served with rice or baked potatoes. TIME - Preparation takes 10 minutes, cooking takes 15 minutes. VARIATION - Vary the type of bean used - try haricots, soya beans or even chick peas.
