Mostly I don't use meat substitutes. Instead I think lentils and beans, or rice and beans. Combined they provide protein. Gratins; pasta with vegetable sauces; and add or use shredded (julienne) veggies - like zucchini and broccoli -- these are sometimes available precut as " slaw. " eggplant is versatile. About pizza -- one of our favorite pizzas is vegetarian. I usually just wing it but here goes... @@@@@ Mediterranean Pizza 1 focaccia (8-inch square/round) or pizza shell (prebaked) or 2 pita breads (Etc) 2 tbs olive oil 1/4 tsp basil pesto minced fresh thyme minced fresh rosemary minced roasted garlic, to taste 1/2 red onion, or less, thinly sliced 1 roma tomato sun dried tomatoes, softened red pepper flakes cashews grated Mozzarella Preheat oven to 400F (200C). Mix oil, pesto, herbs and garlic. Spread on the bread. Spread the onion slices on top. Cut a slice off the stem end of the tomato and squeeze out the seeds and juice. Thinly slice the tomato. Chop or dice the softened sun dried tomato. Spread the tomatoes on the pizza. Sprinkle with red pepper flakes. Spread the cashews. Top with cheese. Sprinkle with additional olive oil (optional; don't want it too oily). Bake 10 to 15 minutes or until cheese melts and is starting to brown. In our house the following are sort of stand by quick and easy recipes: 1) 3 bean chile (no meat and no meat analogs) 2) clean the fridge vegetable soup and corn bread or biscuits 3) vegetarian refried beans and fixings for tacos. Here I use the faux burger crumbles. 4) " shepherds pie " Also uses burger crumbles. This also freezes beautifully and usually there is one in our freezer for a quick meal. 5) Mac and cheese and a salad. 6) vegan patties on buns and potato wedges. (If you want the recipe let me know. They are easy and freeze great. But email me off list as I don't have mastercook!) 7) faux chicken a la king. (we use an analog called Diced Chix that we buy in bulk at an ABC health food store.) This is a winter time comfort food! 8) beans and rice. We precook our beans and freeze them and sometimes have cooked rice in the freezer as well. Super fast and filling. Can also be mixed up and mashed a bit and stuffed into flour or corn tortillas. 9) spinach and tofu lasagna rolls(I make ahead and freeze.) 10) bean and cheese burritos. (I cheat and get them at the store!) 11) Home made pizza We have other stuff that we eat too but these are the quick and easy's that show up routinely over the weeks.
