" * Exported from MasterCook * Lima Bean and Sun Dried Tomato Soup Recipe By :Lyons Press (CT) Serving Size : 4 Preparation Time :0:05 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup extra virgin olive oil 1 cup finely chopped onion 2/3 cup thinly sliced celery -- thinly sliced 2 garlic cloves -- thinly sliced 30 ounces canned lima beans -- drained, rinsed 1/2 cup sun-dried tomato puree 3 3/4 cups Vegetable Stock 2 tablespoons chopped fresh rosemary or thyme salt and pepper 2 ounces Parmesan cheese shavings -- to serve PAGE 26 Soups and Appetizers / Serves 4 / Preparation time: 5 minutes / Cooking time: 25 minutes / Although it takes only a few minutes to prepare, this chunky soup distinctly resembles a robust Italian minestrone. It also makes a worthy main course served with bread and plenty of Parmesan. / 1. Heat the oil in a saucepan. Add the onion and saute for 3 minutes until softened. Add the celery and garlic and saute for 2 minutes. 2. Add the lima beans, sun-dried tomato puree, vegetable stock, rosemary or thyme, and a little salt and pepper. Bring to the boil, then reduce the heat, cover and simmer gently for 15 minutes. Serve sprinkled with Parmesan shavings.
