Butter Bean and Sun Dried Tomato Soup

1 tablespoon extra virgin olive oil

1/2 cup finely chopped onion

1/3 cup thinly sliced celery -- thinly sliced

1 teaspoon minced garlic

16 ounces frozen butter beans

2 tablespoons sun-dried tomato pesto

2 cups defatted low-sodium vegetable broth

water -- if needed

1 teaspoon dried italian seasoning

salt and pepper

1 ounce shredded Parmesan cheese

 

Although it takes only a few minutes to prepare, this chunky soup distinctly

resembles a robust Italian minestrone. It also makes a worthy main course served

with bread and plenty of Parmesan.

 

1. Heat the oil in a saucepan. Add the onion and saute for 3 minutes until

softened. Add the celery and garlic and saute for 2 minutes.

 

2. Add the beans, sun-dried tomatos, vegetable stock, herbs, and water if

desired. Bring to the boil, then reduce the heat, adjust seasoning, cover and

simmer gently for 20 minutes. Serve with Parmesan.
