It also makes a worthy main course served with bread and plenty of Parmesan. 1. Heat the oil in a saucepan. Add the onion and saute for 3 minutes until softened. Add the celery and garlic and saute for 2 minutes. 2. Add the beans, sun-dried tomatos, vegetable stock, herbs, and water if desired. Bring to the boil, then reduce the heat, adjust seasoning, cover and simmer gently for 20 minutes. Serve with Parmesan.
