Black Bean Soup with Soba Noodles

1/2 pound soba noodles -- (dried)

2 tablespoons peanut or vegetable oil

1 bunch scallions -- sliced

2 garlic cloves -- roughly chopped

1 red chili pepper -- seeded and sliced

1 half-inch piece fresh ginger -- peeled, grated

1/2 cup black bean sauce

or black bean stir-fry sauce

3 cups Vegetable Stock

1 1/2 cups bok choy -- shredded

or spring greens, shredded

2 teaspoons soy sauce

1 teaspoon superfine sugar

1/4 cup raw unsalted shelled peanuts

1. Cook the noodles in a saucepan of boiling water for about 5 minutes, or until

just tender.

 

2. Meanwhile, heat the oil in a saucepan. Add the scallions and garlic and saute

gently for 1 minute.

 

3. Add the red chili, fresh ginger, black bean sauce, and vegetable stock and

bring to a boil. Stir in the bok choy or spring greens, soy sauce, superfine

sugar, and peanuts; reduce the heat and simmer gently, uncovered, for 4 minutes.

 

4. Drain the noodles and pile into serving bowls. Ladle the soup over the

noodles and serve immediately.

 

FOOD FACT / Soba noodles, traditional in Japanese cooking, are made from

buckwheat and whole-wheat flour, giving them a nutty flavor without the dryness

of many whole meal pastas.
