Creamy Coleslaw

I've made this before, and I made it last night for the party I'm

throwing tonight (barbecue theme -- barbecued tofu, coleslaw, beans,

chips-and-dip, and root-beer floats); it's so yummy. Definitely

tried-and-true, and it's low-fat.

Creamy Coleslaw

Amount Measure Ingredient -- Preparation Method

6 cups cabbage -- coarsely shredded

1 cup carrot -- shredded

1 medium bell pepper -- cut into very thin strips

Creamy Coleslaw Dressing

 

Combine the cabbage, carrots, and peppers in a large bowl, and toss to

mix well.

 

Combine the dressing ingredients in a small bowl, and stir to mix well.

Pour the dressing over the cabbage mixture, and toss to mix well.

 

Cover the salad, and chill for 8 hours or overnight before serving.

3/4 cup Hellman's low-fat mayonnaise

3 tablespoons vinegar, distilled white

2 tablespoons sugar

1 tablespoon dijon mustard

1/4 teaspoon celery seed

1/8 teaspoon ground white pepper

 

Combine in a small bowl, and stir to mix well.
