Guest guest
I never have a problem with leftover corn bread - its NEVER leftover!!! Its consumed. But I may make some fresh corn bread just to fiddle with this dish. The Farm Vegetarian Cookbook was one of the first I purchased as a new bride with a vegetarian husband. When ever I see a recipe by Nick Sundberg I take a second look. Has anyone ever purchased prepared corn bread for stuffing, Pepperidge Farm or any others? Any recccomendations? @@@@@ The Farm's Cush 1/2 stick Butter 1/2 cup Onion, small dice 1/4 cup Celery, small dice 4 cups Cornbread, cut into small pieces 1/2 teaspoon Thyme 1/8 teaspoon Sage Salt and pepper to taste 3/4 cup Chicken broth Melt the butter in a large skillet. Add the onion and celery. Cook until just soft. In a separate bowl, toss together the cornbread, herbs and broth. Add to the skillet and cook over medium-low heat until the bottom begins to brown. This stuffing-like side dish is a great way to use up leftover cornbread.
